Verjus is a naturally acidic juice made by pressing unripe green grapes before fermentation can occur. Produced in southern France, the grapes are harvested early to capture freshness and balance, resulting in a clean, stable juice with refined acidity and no alcoholic development.
In cooking, Verjus provides a gentle sharpness that falls between citrus juice and light vinegar. Its flavour is subtle and well rounded, with delicate green grape and fresh apple notes that lift dishes without masking their natural character. The texture is smooth and fluid, making it easy to incorporate into both hot and cold preparations.
Designed for everyday cooking, the 33cl format is ideal for home kitchens and small-batch use. Verjuice works beautifully in salad dressings, sauces, pan deglazing, vegetable dishes, fish, poultry, and fruit-based desserts where controlled acidity is essential.
A refined alternative to lemon juice or vinegar, verjus is perfect for cooks seeking balance, precision, and subtlety across both savoury and sweet dishes.
