The pear fruit is very popular in Brazil, especially in the federal states of Gois and Minas Gerais. The fruits are eaten raw, cooked with rice but also processed into liqueur, juice and ice. The processing of the fruit is deeply rooted in the local culture and gastronomy of the inhabitants of the Savannah region of Cerrado in the state of Minas Gerais. The Pequi oil from D`Horta is extracted directly as a food oil from the fruit core cold pressed. For one litre of oil, over 1000 fruits must be processed. The result is a yellow-orange oil with a fruity, pleasant aroma, which is slightly reminiscent of coconut. In the Brazilian kitchen, pequi oil is very popular in combination with rice, chicken or salad.
