- Ancient Olive Grove: Consists of 4000 roots, some up to 800 years old. It includes many self-rooted olive trees, thousands of wild olive tree roots, and unique varieties. There are also modern olive groves with an additional 4000 olive trees
- Modern Certified Olive Mill: Continues the legacy of the old stone-built olive mill, including the traditional watermill, millstones, and press beds
- Innovative and Eco-friendly Processes: In the Monastery's olive grove, modern innovative production processes are used, such as composting all the residues of the olive mill, since no chemical fertilizers are used in the Monastery
- Traditional Manual Harvesting: The harvesting of the olives is done with respect, by the hands of the monks, as in the old days, involving labor-intensive manual work
- Health Benefits: The exceptional virgin olive oil is recommended by modern medicine due to its valuable components that provide health, well-being, and longevity. The levels of polyphenols exceed four times and five times the average of the indicators provided by the European Union, and in combination with Vitamin E they provide extra protection against the oxidation of blood lipids.
