Cumin is the dried fruit of Cumin cyminum an Eastern Mediterranean and Indian plant. The spice is prized for its distinctive peppery aroma, rich warm, but slightly bitter taste and ability to draw out the natural sweetness of other ingredients. Cumin is a key ingredient in curry powder and can be used to flavour a wide variety of savoury foods. Cumin is also commonly called Jeera and considered the second most important Indian spice. Dry-roasted seeds are used in snack and appetisers and can be coarsely ground to sprinkle on yogurt salads. The seeds are also often fried to release their flavour before adding to other recipe ingredients.

Directions
To prepare the seed yourself, first roast in a hot, dry, frying pan for a few minutes and then grind using a mortar and pestle or a coffee grinder.
